  1. Make ready 1 Jackfruit medium(riped)
  2. Get 6-7 cup Jaggery
  3. Prepare 1/2 cup Ghee

Chakka varatti is jackfruit jam,the mother of jams. The fruit to preserve process becomes gastronomically satisfying only when your five senses are awakened and you are actively involved in the experience. It is definitely a test of toil and tolerance to begin with but soon the daunting task is. Chakka / Jackfruit is a native fruit of Kerala and it will be there is almost every house backyard.

Steps to make Chakka Varatti or Jackfruit Preserve:
  1. Remove the jackfruit pods and deseed them. Grind the jackfruit pods to a smooth paste. Pressure cook in a vessel for 3 whistles.
  2. Heat a heavy bottomed Kadai or Uruli, add the jaggery.
  3. Dissolve the jaggery in about 1 cup of water.
  4. Let it boil on medium heat till one string consistency.
  5. Then add the pureed jackfruit and cook on medium heat, stirring once in a while to avoid burning.
  6. Do not cook on high flame.
  7. Once all the moisture is absorbed and the mixture starts thickening add the ghee little at a time or whenever you feel the mixture sticking to the botto
  8. Keep stirring and cooking till the mixture leaves the sides of the kadai.
  9. Remove from flame and let it cool naturally. Transfer into clean containers and keep dry.
  10. Delicious chakka varatti is ready. Eat it as it is or makes ela ada, Pradhaman or have it with Adai or even as bread spread.

Its mainly used from the month of February onwards. In Kerala, we use both ripe and tender jackfruit. Tender jackfruit is used for making chakka erissery, chakka puzhukku, chakka upperi. Chakka varatti is an authentic Kerala recipe made with jack fruit and jaggery. During my recent trip to India for my niece wedding, we as a group of family members were sitting and talking in the Also mami shared the recipe of payasam they make with this jackfruit preserve.
