Usually this chakka pradhaman is prepared using chakka varatti (jack fruit jam) but I've done this with fresh jackfruit as I didnt get chakka varatti here. My sis kept pushing me to try this during the jackfruit season for making the post ready for Onam and here is the recipe from my kitchen 🙂.

The ingredients needed to make Chakka Pradhaman/ Jackfruit Kheer:
  1. Get 1 cup Chakka varati/ jackfruit preservative
  2. Take 1/8 cup Jaggery
  3. Get 1.5 cup Thin Coconut Milk
  4. Prepare 1/2 cup Thick Coconut Milk
  5. Take 1/2 tsp cardamom powder
  6. Prepare 2 tbsp Coconut slices
  7. Make ready 1 tbsp Ghee
  8. Get 10 Cashew nuts

I prepared this as a vegan kheer Traditionally chakka pradhaman is prepared with chakka varatti or Jackfruit preserve, which is a separate recipe on its own. Chakka payasam also known as Chakka pradhaman is a kheer made with jackfruit , coconut milk and sweetened with jaggery. Finally made this and has been in my draft for a month and with now without any delay a yummy and heavenly kheer made with Jackfruit. Jackfruit Kheer or Chakka Pradhaman is a dessert made with ripe jackfruit, jaggery and coconut milk.

Instructions to make Chakka Pradhaman/ Jackfruit Kheer:
  1. Dissolve the jaggery in 1/2 cup of water and strain for impurities.
  2. Add the chakka varatti to this jaggery syrup and let mix it well, until the varatti dissolves and mix well with the syrup.
  3. Now add the thin coconut milk and let everything boil for 6 to 7 minutes.
  4. Remove from heat and add the thick coconut milk. Mix well.
  5. Add cardamom powder and mix well.
  6. Heat a small frying pan with ghee and fry the coconut pieces till they turn brown.
  7. Also add cashew nuts and fry.
  8. Add this to the pradhaman.
  9. The seeds are removed from the jackfruit and cut into small pieces. The fruit is then cooked with ghee and jaggery: it eventually reaches a paste- or jam like consistency.

It is typically garnished with a liberal heap These can be made with broken wheat , rice noodles (Ada Pradhaman), lentils (Parippu Pradhaman) or fruits like banana or jackfruit. As long as it is not.
