- Put back into pan and heat gently whilst pasta cooks. Add a ladle of cooking water to the sauce. Drain pasta and add to sauce.
- Mix well and serve with chopped nuts :)
Sprinkle with pine nuts and parmesan then serve. Make it gluten free: Use gluten-free pasta. Toss through rocket or shredded silver beet leaves instead of baby spinach. Meanwhile, toss the courgettes in the olive oil and season. Tip into a serving bowl and add the ricotta, lemon zest and juice and the cooked pasta.
