Yuzu Tea is made by mixing herbal Yuja marmalade (otherwise known as yuja-cheong, a blend of yuja fruit with sugar or honey) in a cup of steaming hot water. A cold version can be made by diluting yuja-cheong in cold plain or sparkling water with some ice cubes for the summer. š Today we prepare Fizzy Yuzu Hojicha using the Hojicha Powder and sweet yuzu marmalade.
Instructions to make Fizzy Yuzu Tea & Soda Gummies:
- If you're using yuzu tea with large yuzu skin chunks, then chop it up roughly. I usually use kitchen scissors to cut mine - this reduces the amount of things I need to wash.
- Add yuzu tea and 50 ml soda into a small pan. Heat and stir. When the edges become bubbly, remove from the heat. Do not let it boil.
- Shake in the powdered gelatin, and mix well with a rubber spatula. When it's mixed evenly, add the remaining 30 ml of soda and mix.
- Pour the mixture into a container. After it cools down, chill in the fridge to harden. Since I don't own any silicone molds, I usually use a milk carton.
- The great thing about milk cartons is that I can cut it open or dismantle it when the gummies are hard to take out. Please cut the gummies into preferred sizes, and enjoy.
- Pack in storage containers to keep in the fridge.
- Here's my recipe for the yuzu tea.
Hojicha Co. is the first brand to specialize in Japanese roasted green tea in North. Organic green tea with sparkling notes. The yuzu was added at the very end of the drying process. A tea with fresh, natural notes. Stir in the yuzu juice, vodka and sparkling water.
