To serve, use a very sharp knife to cut the tuna into ½cm slices. Arrange on a platter and scatter over the microleaves and chives. Roll the tuna in the ginger mixture, pressing lightly so the mixture sticks to the tuna. Place a saute pan over high heat.

- Sear the tuna on a hot pan. The goal is to sear just 2mm on each side of the tuna. Do not sear the ends.
- Slice tuna into 1/4 inch pieces. Arrange tuna in circular on a plate.
- For garnish: use only the white part of a green onion, the longer the better. Make an incision to the side of the onion, peel a few layers, julienne the onion, put in ice cold water with some radish sprouts.
- Drizzle the dressing on tuna.
- Put some of the crisp onion and radish sprouts in the center of the tuna for garnish.
